Clean your fresh catfish and cut into steaks. Bring water to a boil with onion, ginger, garlic and your favourite pepper-soup spice. Add the fish, scotch bonnet to taste, and simmer gently until just cooked — about 12–15 minutes.

Finish with fresh herbs. Serve hot with rice, yam or on its own. Use cleaned & gutted catfish to save prep time.
