Fresh catfish is best cooked the day it arrives, but with the right handling it keeps beautifully. Keep it cold from the moment it lands — store at or below 4°C, on ice if you can.
For longer storage, pat the fish dry, wrap tightly and freeze; fillets keep well for up to three months. Thaw in the fridge overnight rather than at room temperature.
Live catfish should be kept in clean, oxygenated water and cooked as soon as possible for the very best flavour.
